Many RFID companies maketamper-evident RFID labels(view a list). Typically, such labels are applied to assets. If a label is removed, it breaks the antenna's connection with the chip and the device thus no longer functions. This prevents the tag from being used on another item. You can set up software in a reader to alert you if a tag is not read, which would tell you that an item has either been tampered with or stolen.
